A few fresh ingredients for a cake unmistakable flavor, sweet and childish. The frothiness cream and sponge mounted in a work manlike manner will give you the feeling of eating a cloud of strawberries!
1 egg yolk
200g caster sugar
80g flour 00
400ml whipping cream
Preheat the oven to 175 °.
To make the sponge whisk the eggs, egg yolk and sugar until the mixture doubles in volume and writes (if lifted with a spoon and dropped form a ribbon that stays visible on the surface for at least three seconds). The ideal is to get it done at a planetary, or use an electric immersion blender (it will take about 10 minutes).
Stir flour and starch and then together: the starch is so fine that in contact with the wet mixture of eggs tends to form lumps anyway; it is easier to incorporate the two sides if the flour has already “broken”.
Gradually add the dry mixture to the eggs using a spatula gently move from top to bottom; subsidiaries that do not have formed pockets of flour.
Pour into well-greased baking sheet and bake for 30 minutes.
