1.5kg Baby potatoes
1 tablespoon salt
2 teaspoons finely grated lemon
1 teaspoon paprika
Boil potatoes for 15 minutes
Preheat oven to 200°C. Place the butter in a large roasting pan. Place in the oven for 3 minutes or until the butter melts. Add the potatoes and toss to coat. Use a potato masher to lightly crush the potatoes. Roast for 10 minutes or until the potatoes start to brown. Combine the salt, lemon rind and paprika in a small bowl. Sprinkle the salt mixture over the potatoes. Roast for a further 15 minutes or until golden.
