Shining like a ruby, this refreshing jelly looks like a jewel: the crowning touch to a sumptuous dinner.
Ingredients for 4 people:
500 g ripe strawberries
55 g caster sugar
the juice of half a lemon
About 300 ml water
5 sheets of gelatin
Wash the strawberries, cut into small pieces, place in a bowl with sugar and lemon.
Cover with plastic wrap and place the bowl over a saucepan of boiling water and let it go 30 minutes.
Transfer the compote in a piece of linen-weave, or in a Chinese strainer lined with cheesecloth and let drip into a container.
At this point you should have about 200 ml of juice; dilute it with water to make 500 ml total.
Cut the gelatin into squares and place in a bowl and cover with just the strawberry juice.
After 10 minutes, bring the bowl over a saucepan of boiling water slightly (the bottom of the bowl should not touch the water, or the gelatin dissolved.
Add to the rest and pour it into the mold by filtering it through a strainer.
Leave in refrigerator at least 5 hours.
